Stop throwing out your strawberry tops. You can infuse those in red wine vinegar to make THE BEST summer salad dressing for mixed greens.
I’ve already had to remake this salad dressing to replenish what I’ve used up so quickly, but I made sure to make extra vinegar to keep on hand.

Strawberry Top Infused Salad Dressing

| INGREDIENTS |

| A bunch of discarded strawberry tops |
| 1/2 cup red wine vinegar, or enough to cover tops |
| 1/2 cup avocado or other light oil |
| 1 Tbsp. Italian seasoning (I make my own) |
| 2 Tbsp. honey or sugar |
| 1 Tbsp. mayonnaise |
DIRECTIONS:
- Starting a few days ahead of time, take discarded strawberry tops and add them to a jar. Cover with red wine vinegar and allow to infuse a few days.
- For the dressing, start by straining the strawberries out of the vinegar into a jar for making your dressing.
- Use 1/2 cup strained vinegar to 1/2 cup oil, plus the remaining dressing ingredients and shake well. If the salad dressing is too tart for your liking, add another 1/4 oil.
- Use the dressing on your salad and enjoy!
