When you run out of the most important hotdog condiment after picking a cabbage… quick sauerkraut!


Lil Urban Farm's recipe for Quick Vinegar-based Sauerkraut

Quick Sauerkraut

MAKES:

1 quarts

HARVEST:

Cabbage, onion

INGREDIENTS
1 head cabbage
(2 lbs)
1/2 onion, sliced
1 Tbsp. course salt
2 Tbsp. sugar
1/2 cup apple cider vinegar
1 1/2 cups water
1 Tbsp. dijon mustard

DIRECTIONS:

  1. Wash and chop your vegetables.
  2. Combine everything into a large pan on the stovetop.
  3. Cook on medium heat, checking every 10 minutes to stir and make sure the kraut isn’t sticking.
  4. Cook for 20-30 minutes, or until everything is wilted and tastes like sauerkraut.
  5. Store in a 1 quart jar. Use within 2 weeks.
