You might hear this called “Cowboy Candy” in some circles, but that name is a trademarked family product you can buy if you are lucky enough to find some near you.
I got this specific recipe from Ball Canning with minor modifications.

They are a sweet+hot addition to chili, burgers, cream cheese spreads & more… I’ve even put them on top of deviled eggs. And don’t you dare toss that syrup when the jar is emptied. Save it for saucing buffalo wings, meat glazes, etc.

Canning Candied Jalepeños (known commercially as ‘Cowboy Candy’)

4 pint jars (16 oz.)

| 4 pounds fresh jalapeños, sliced |
| 6 cloves garlic, minced |
| 3 cups white vinegar |
| 2 tsp. mustard seeds |
| 1 tsp. turmeric powder |
| 2 tsp. course salt |
| 4 cups sugar |
DIRECTIONS:
- Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set bands aside.
- Rinse the hot peppers under cold running water; drain. Remove the stems and blossom ends from the peppers. Cut the peppers into slices. Place the peppers in a large bowl.
- Combine the rest of the ingredients together in a large stainless-steel or enameled saucepan. Bring the mixture to a boil.
- Add peppers and cook 5-10 minutes.
- Pack the hot peppers into a hot jar, leaving 1/2-inch headspace. Ladle the hot liquid over the peppers, leaving 1/2-inch headspace.
- Remove air bubbles. Wipe the jar rim. Center the lid on the jar. Apply the band, and adjust to fingertip-tight. Place the jar in the boiling-water canner. Repeat until all the jars are filled.
- Water must cover jars by 1 inch. Adjust heat to medium-high, cover canner, and bring water to a rolling boil. Process pint jars 15 minutes, adjusting for altitude. Turn off heat and remove cover.
- Remove jars from canner; do not retighten bands if loose. Cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.
