Lil Urban Farm's Cajun Okra and Shrimp Recipe

Cajun Okra and Shrimp

TIME:

3-4 people

HARVEST:

Okra, corn, onion, hot peppers, tomatoes

INGREDIENTS
2 Tbsp. butter
1/2 cup onion, diced
2 1/2 cups chopped okra
2 1/2 cups chopped tomatoes (or 1 pint or 1 can of stewed tomatoes*)
1-2 hot peppers, diced
1/2 cup water*
2 Tbsp. vinegar
1 1/2 cups corn kernels (about 2 ears)
1 1/2 Tbsp. cajun seasoning, or more to taste (I like this one HERE)
1-2 dozen raw shrimp
White rice, for serving

DIRECTIONS:

  1. Wash and chop your veggies.
  2. Melt butter in a frying pan over medium heat and add onions. Cook, while stirring, for 1 minute. 
  3. Add okra and cook for 2-3 minutes.
  4. Add tomatoes and cook, stirring, for 1 minute. 
  5. Add hot peppers, water, vinegar, and seasoning. Cook an additional 3 minutes.
  6. Add corn and shrimp. Cook until shrimp are pink, about 2-3 minutes (depending on the size of the shrimp).
  7. Serve hot over cooked white rice and hot sauce on the side.

NOTES:
*If you use canned tomatoes with juice, you may not need the additional water.
