Cajun Okra and Shrimp

INGREDIENTS |

2 Tbsp. butter |
1/2 cup onion, diced |
2 1/2 cups chopped okra |
2 1/2 cups chopped tomatoes (or 1 pint or 1 can of stewed tomatoes*) |
1-2 hot peppers, diced |
1/2 cup water* |
2 Tbsp. vinegar |
1 1/2 cups corn kernels (about 2 ears) |
1 1/2 Tbsp. cajun seasoning, or more to taste (I like this one HERE) |
1-2 dozen raw shrimp |
White rice, for serving |
DIRECTIONS:
- Wash and chop your veggies.
- Melt butter in a frying pan over medium heat and add onions. Cook, while stirring, for 1 minute.
- Add okra and cook for 2-3 minutes.
- Add tomatoes and cook, stirring, for 1 minute.
- Add hot peppers, water, vinegar, and seasoning. Cook an additional 3 minutes.
- Add corn and shrimp. Cook until shrimp are pink, about 2-3 minutes (depending on the size of the shrimp).
- Serve hot over cooked white rice and hot sauce on the side.
NOTES:
*If you use canned tomatoes with juice, you may not need the additional water.
