Last-Minute Quick Vinegar Sauerkraut
When you run out of the most important hotdog condiment after picking a cabbageโฆ quick sauerkraut!
Quick Sauerkraut

Cabbage, onion
INGREDIENTS 1 head cabbage
(2 lbs)1/2 onion, sliced 1 Tbsp. course salt 2 Tbsp. sugar 1/2 cup apple cider vinegar 1 1/2 cups water 1 Tbsp. dijon mustard DIRECTIONS:
- Wash and chop your vegetables.
- Combine everything into a large pan on the stovetop.
- Cook on medium heat, checking every 10 minutes to stir and make sure the kraut isnโt sticking.
- Cook for 20-30 minutes, or until everything is wilted and tastes like sauerkraut.
- Store in a 1 quart jar. Use within 2 weeks.

Harvesting Pea Shoots โ Yes, You Can!
Most people harvest the peas from pea plants in the gardenโฆ but did you know you can also harvest the pea shoots?
Iโve grown pea shoots as microgreens inside, but the top 2 inches of the pea vines outside are also edible. They are tender and taste similar to the peas with a more earthy, green flavor.
They go great in salads and sandwiches.
And donโt worryโฆ they donโt set the plant back because the pea vines grow so fast. Give them a try!
