When you see a thicker stalk forming in your carrots, these are bolting. Pick them if you aren’t planning to let them go to seed.
They are sending up a flower stalk which transfers the energy from the root crop toward flower and seed production. The roots start to lose their color and flavor, and they become woody and hard—much more like a typical root than the sweet carrot you likely planted them for.

I’m taking it all in because a lot of this is about to change over the next few weeks as the summer veg gets planted, garlic and shallots start being harvested, and bolting items either get picked and prepped for storage, fed to the chickens, or composted (no waste here).
But there is still so much beauty and abundance in these spaces. I’m so grateful for my garden space.
